Kasisi doesn’t need Fat Thursday for sweet doughnuts called vitumbuwa to appear in children’s hands – but the dear sisters will still make sure that tradition is honoured. Ingredients:
– 240 g flour
– 2 teaspoons baking powder
– Up to 100 g sugar
– Approx. 360 ml milk or water
– 2 eggs
– Vegetable oil (for deep frying)
All ingredients should be at room temperature. Mix the dry ingredients thoroughly in a medium sized bowl. Add the eggs and half the milk, stir gently just until the ingredients are combined. Then add the rest of the milk, making sure the batter is not too runny.
Mix the batter well, making sure there are no air bubbles or lumps in the batter.
Heat about 1 cup of vegetable oil over a high heat. Using a large spoon or ice cream scoop, spoon the dough in portions into the oil, forming small doughnuts. Fry until a nice golden colour is achieved. Drain on a paper towel and eat with a smile. Without one, it doesn’t taste as it should.
